Here are some general brewing principles from Onyx Coffee Lab (where our coffee is roasted) to get you started making your perfect cup at home!
1. General Principles
- Ratio: 1:15 to 1:16 (Coffee to Water).
- Water Temperature: 203°F - 208°F
- Grind: Medium-fine (finer than traditional pour-over).
- Water Quality: Use filtered water with good mineral content.
2. Standard Pour-Over Method (V60/Onyx Method)
- Prep: Place filter in brewer, rinse with hot water, and discard water. Add 18-20g of ground coffee.
- Bloom: Pour \(2 \times\) the weight of coffee (e.g., 40g water for 20g coffee). Wait 30–45 seconds.
- First Pour: Pour quickly up to 60% of total water (e.g., 300g total water = 180g) within 30 seconds.
- Final Pour: Add remaining water gently.
- Total Time: Aim for 2:45–3:15 minutes.
3. Key Tips from Onyx
- Grind Fresh: Right before brewing.
- Measure by Weight: Use a scale to ensure consistency.
- Adjust to Taste: If it tastes too bitter, grind coarser. If too sour or weak, grind finer.
