Here are some general brewing principles from Onyx Coffee Lab (where our coffee is roasted) to get you started making your perfect cup at home!

1. General Principles
  • Ratio: 1:15 to 1:16 (Coffee to Water).
  • Water Temperature: 203°F - 208°F 
  • Grind: Medium-fine (finer than traditional pour-over).
  • Water Quality: Use filtered water with good mineral content. 

2. Standard Pour-Over Method (V60/Onyx Method)
  1. Prep: Place filter in brewer, rinse with hot water, and discard water. Add 18-20g of ground coffee.
  2. Bloom: Pour \(2 \times\) the weight of coffee (e.g., 40g water for 20g coffee). Wait 30–45 seconds.
  3. First Pour: Pour quickly up to 60% of total water (e.g., 300g total water = 180g) within 30 seconds.
  4. Final Pour: Add remaining water gently.
  5. Total Time: Aim for 2:45–3:15 minutes. 

3. Key Tips from Onyx
  • Grind Fresh: Right before brewing.
  • Measure by Weight: Use a scale to ensure consistency.
  • Adjust to Taste: If it tastes too bitter, grind coarser. If too sour or weak, grind finer.
